Recipe:
Chop 1/2 cup nuts ( I used cashews and almonds), and toast in the oven at 400F for ~4 minutes, until fragrant. Cut 1 French bread loaf into large chunks and toast in the oven for ~ 4 minutes at 400F. Whisk together 2 cups vanilla soy milk, 1 Tablespoon nutritional yeast, 2 teaspoons pumpkin pie spice (or cinnamon), 1 teaspoon almond extract (optional), 3 Tablespoons flax meal, 1 pinch salt, nuts, and 4 Tablespoons hemp seeds. Dunk each piece of bread into the liquid to soak through, then place on a well greased casserole dish. Top with the remaining mixture and 1 cup fresh cranberries. Bake in the oven at 350F for 45 minutes. Boil 1/2 cup cranberries, 1/2 cup maple syrup, and 1 tsp vanilla extract until the cranberries burst, then blend in a high powered blender. Garnish the french toast with fresh mint and enjoy!
