Ingredients:
(Makes 6-8 servings)
French Onion Soup
• 500g Yellow or Spanish Onion
• 500g Vidalia Onion
• 50g (3+1/2 tablespoons) Butter
• 25g Flour
• 2L (8+1/2 cups) Beef Stock
• 60mL (1/4 cup) Sherry Wine
• 1 teaspoon Salt (more to taste)
• 10mL (2 teaspoons) Red Wine Vinegar (Optional)
Garnish:
• 1 Baguette
• 1 cup Swiss Cheese (Gruyère or Emmental)
• 10g (2 teaspoons) Butter or Olive Oil
