Hello everyone, Hope you all doing good. Christmas eve and New year in few days and many of you have been asking to post something special for Christmas. So, Today’s recipe is “PLUM CAKE WITH & WITHOUT ALCOHOL”.

Christmas is all about spreading joy and spending time with family and Christmas will be bored without having good food especially plum cakes aka fruit cake. Plum Cake
Plum cake refers to a wide range of cakes made with either dried fruit (such as currants, raisins, or prunes) or with fresh fruit. There is a wide range of popular plum cakes and puddings. Since the meaning of the word “plum” has changed over time, many items referred to as plum cakes and popular in England since at least the eighteenth century have now become known as fruitcake. The English variety of plum cake also exists on the European mainland, but may vary in ingredients and consistency. Settlers in British colonies brought the dried fruit variety of cake with them, so that for example, in India it was served around the time of the Christmas holiday season and in the American colonies, where it became associated with elections, one version came to be called election cake.

Plum cakes made with fresh plums came with other migrants from other traditions in which plum cake is prepared using plum as a primary ingredient. In some versions, the plums may become jam-like inside the cake after cooking,or be prepared using plum jam.Plum cake prepared with plums is also a part of Ashkenazi Jewish cuisine, and is referred to as Pflaumenkuchen or Zwetschgenkuchen. Other plum-based cakes are found in French, Italian and Polish cooking.

Here am baking two types of plum cake. Previously I have soaked dry fruits in 3 ways.in rum, wine and fruit Syrup.
That’s why am trying to show you at least 2 types. The plum cake with rum and wine is same. Only difference is in one cake, rum and in another cake we used wine instead of rum. Choice is yours.
There is slight difference in fruit soaking cake and rum soaking cake

1.Dry fruits soaking in 4 different ways.

Rum soaking plum cake
Ingredients

Butter..150. To 200 GM
Brown sugar- 200 to 250 GM
Egg -3 large
Rum. / Red wine- 45 to 100 ml(we can use flour up to 300 GM.so we can add here more liquid to adjust consistency)
Lime zest. 1 lime
Candied Orange / orange peel- 1 TBS/. 1 orange
Dryfruits- 400 GM’s to 700 gms- as per the richness,no worries if less or more🥰
Nuts -100 to 200 GM’s
Almond grind- 50 to 80 GM’s
Flour-260 -300 GM’s
If you used more dry fruits ,I mean 600 to 700 GM’s we. Can use upto 300 GM’s flour
Then we will get batter of 2 cake approximately 1.5 kg
Crystalised ginger-1/2 piece
Spices-. 1 TSP(cinnamon,cloves,cardamom,nut meg 1/4. TSP each of l
Baking powder 1 TSP
Salt_1/2 TSP
Caramel syrup 1/4 cup
Chocolate powder 1 tsp

Fruit Syrup soaking dry fruits cake

Orange juice
– 45 to 100 ml
(we can use flour up to 300 GM.so we can add here more liquid to adjust consistency)

Dryfruits- 400 GM’s to 700 gms-
Nuts -100 to 200 GM’s

All s are same as above cake
Both cake making process is same.
1.Beat butter 5 minutes,add brown sugar then beat atleast 2 min
2. In another bowl beat eggs one by one untill fluffy
3.Add dry incredients together and sieve twice
4 .Add this dry ingredients into butter batter
5.Add egg mixture
6. Add liquid incredients to this mix(rum/wine/fruit juice, caramel syrup,)
7.Add dry fruits,ginger, orange candy, to the mix
8.if you are baking fruit syrup soaking dry fruits add one tsp vanilla essence to the above liquid steps
Fold all ,cut and fold method
Preheat oven/ otg 170 degree 10 min
Then Bake upto one hour
May be as per otg / oven type the baking time varies +/- 10 min
