The second set up looks better but I would go further by adding a more diverse range of sizes and maybe even some non-framed/non-square elements like an antique low-relief portrait, a painting in an ornate oval frame, a deer antler mount, a mounted candle sconce, or other antique items that maintain the overall vibe and theme but aren’t as uniform. Even just adding one very large and somewhat centrally located piece and two or three very small or round ones would really help break up your wall and create interest. This is an example (just pulled from Pinterest) that I think sort of shows what I mean, but obviously adjusted to fit your style.
