Getting rid of it depends what is above and expense. Structural engineering needed.
But decorating wise, you could put a crown strip low enough to include accent lighting. Or you could put a shelf for decorations that has a crown from the bottom of the shelf to the flat top of the shelf so it looks like the decorations are on the crown. Or have those “sayings” wall art across.

That is a bit inconvenient lol. Hm, I’d say depends on if you wanna go functionality or decoration. I like the idea of putting mounted basket/shelves on it, specifically on the fridge side. I also like the idea of putting a cork board on the counter facing size and using that for photos/recipes etc. 🙂 hope that helps!
