I haven’t had any coferments from the producers mentioned in the article but I would love to try one. But in no way shape or form are these drinks going to provide a substitute for the experience of drinking wine. I am a little confused what the author is suggesting. That these drinks are going to help mitigate climate change? If climate change continues unabated and decimates the wine industry, we are going to have a lot bigger problems than finding great things to drink.
