Enjoyed by the bottle at Restaurant 360 in Toronto.
Gave this a decant and enjoyed over 90 minutes.
The evolution was a lot of fun to see.
Started a little tight, but really opened up with air.
Lots of dark cherry, blueberry, blackberry, but also paired with leather, tobacco, dried herbs, cloves.
Nice acidity, balanced by the tannins that still aren't fully settled.
For a well-stored bottle, I would give it an hour decant or two hours in the bottle before drinking, but this is a treat!
