
Venison wellington is something I wanted to do for a while. It's the first wellington I've done in years and I'm glad it came out decently. It tasted extra delicious as I harvested the deer myself a few days earlier.
The Relic was a delicious and BIG wine, dark fruits, leather, smoky and earthy notes. Definitely something special.
I should have opened it much earlier on the day but I was distracted by the cooking, so I ended up decanting it after the first couple of sips and it really developed from there.
8 years is showing a little bit of development but the wine will probably be even better in another 2 to 5 years.
