William Fèvre Masterclass
2023 William Fèvre Chablis Premier Cru Beauroy
Green apple and lemongrass on the nose with cut grass and slate aromatics. The palate shows lemon and lime zest, almost microplaned, with unmistakable Chablis minerality. Lean, linear, and precise rather than complex, with a faint petrol note underneath. Finishes with a striking note of underripe nectarine.
⸻
2023 William Fèvre Chablis Premier Cru Montmains
Green apple on the nose, though fairly reserved initially. The palate is noticeably more textural than Beauroy, with acidity that clings to the tongue and citrus framed by a subtle spice note. Feels like a clear step up in depth; the nose remains restrained but the palate opens considerably with time.
⸻
2023 William Fèvre Chablis Premier Cru Vaillons
More expressive aromatically, showing citrus peel and grapefruit with a slight “salted margarita” salinity. The palate brings greater mineral drive and length, with pronounced chalkiness. Feels stylistically very classic for Chablis.
⸻
2023 William Fèvre Chablis Premier Cru Les Lys
Richer on the palate with riper citrus compared to the previous wines. More lush and fleshy overall, with the warmth of the vintage showing more clearly here.
⸻
2023 William Fèvre Chablis Premier Cru Fourchaume
Toasted almond notes emerge alongside citrus. The riper fruit and subtle toast begin to integrate nicely, with acidity feeling more settled within the wine. Ripeness increases but the acidity keeps everything restrained and balanced.
⸻
2023 William Fèvre Chablis Premier Cru Montée de Tonnerre
Reminiscent of the previous wine stylistically but with deeper citrus tones, more nectarine and edging toward pineapple. Shows greater depth while maintaining the underlying Chablis tension.
⸻
2023 William Fèvre Chablis Premier Cru Vaulorent
Lime peel and passion fruit on the palate, with a nose broadly similar to the previous wines but with almond nuances. Possibly more chalk-driven than the others in this bracket. Feels tightly structured, almost chiselled from marble.
⸻
Grand Crus
2023 William Fèvre Chablis Grand Cru Valmur
Aromatic profile of pear, apple, lime peel, and mint leaf with a sense of underlying acidity even on the nose. The palate feels balanced and complete, ripe fruit dialed back slightly while acidity is lifted so they meet in perfect equilibrium. Minerality carries through the finish.
⸻
2023 William Fèvre Chablis Grand Cru Vaudésir
Distinctive aromatics of torched earth and grilled eggplant with smoky undertones, almost an umami lift compared to the Premier Crus. The palate is richer and more plush, with ripe fruit and acidity sitting comfortably in balance. Feels generous now but clearly built for aging and increasing complexity.
⸻
2023 William Fèvre Chablis Grand Cru Les Preuses
A more lifted and refined version of Vaudésir, showing orange blossom and heightened salinity. Clearly a step up in class. Very Chablis in character, balancing ripe citrus with oyster-shell minerality that keeps the wine fresh and compelling.
⸻
2023 William Fèvre Chablis Grand Cru Bougros “Côte de Bouguerots”
The palate really hits here, more creamy in texture with an additional layer of complexity that wasn’t obvious in the previous wines. Very interesting and impressively complete, with balance the defining feature.
⸻
2023 William Fèvre Chablis Grand Cru Les Clos
“What the fuck” I said audibly. A remarkable wine, complete, generous, and perfectly balanced. It almost feels separate from the other Grand Crus in both complexity and approachability. A truly special site that produces something unique and profound.
My ultimate takeaway is that premier cru all show a personality that remarks them as unsymmetrical, if you know what you like, you could shop by premier cru, whilst the grands are the complete package.
