Aymerick Geantet worked for many years in Gevrey-Chambertin before moving on to Jura. This wine is fermented and matured in old barrels, with minimal intervention. The nose is clear and precise, and reflected in taste: Persimmon, physalis and a dry, slightly salty minerality I absolutely adore. Was intending to pair with a Mont d'Or, but that was unfortunately moldy. Moldy cheese aside, great wine, will buy again!
