Hey guys I’m making short ribs for my wife tonight not sure which one to open. I would appreciate an assist. dinner in 2 hours so i have some time to decant. thanks in advance
First instinct is the CR. IMO it’ll be a little more braise-friendly than the cabs.

3 great options, the Cote Rote is still too young, the Montelena would be my choice with what you’re making, and add some wine to the ribs ✌🏼 The Chateau d’Issan just won #1 wine (Wine Spectator I think, but the vintage was 22,23 ? I think) let us know how it turns out ☺️

The 16 year old Margaux would be my choice, all day every day, regardless of food pairing.

2010 D’Issan is clicking on all cylinders right now (just had a 2010, 2014, and 2015 not too long ago)
tolerable-fine
It’s certainly subjective but I’d go with Montelena in this case. A bigger wine works better with beef.

It’s braised short ribs with polenta.
