My girlfriend gave me this as a very generous birthday gift..it is an absolute bucket list wine for me! I'm wondering, can I store this in the fridge after opening? Will it oxidise? It's such an extreme wine, I just don't know how it will behave.

    If you’re worried you won’t drink it all within a day or three….buy a can of argon gas like Vineyard Fresh and after you’ve had a glass or two, spray the argon on it and put the cork back in or use a topper. The wine will stay fresh for weeks. I rarely use it on a small bottle though because I like to share my wine. Maybe the girlfriend would like some too? Of course you may be drinking this by the spoon rather than the glass.

    2000 was an exceptional year for Tokaji. I have a bottle of Eszencia from the same year, different producer.

    I don’t know how it will behave but they are supposed to be immortal given the low alcohol content and high sugar. The shops and restaurants in Hungary that serve Eszencia open and keep in fridge until the bottle is done which sometimes takes a while.

    If you don’t have a Coravin, I’d at least use a vacuum cork but it light be difficult to find one to fit the narrow bottle neck.
