
Saw a post talking about natural Champagne the other day. Some people were saying it doesn't exist because you can't have natural & méthode traditionnelle. Well I feel like this Champagne is a good example of natural and unorthodox winemaking in the region. It's a very special rosé de saignée because it blends 50% Chardonnay and 50% Pinot Noir, whereas traditionally rosé de saignée are made exclusively from Pinot Noir and those containing Chardonnay are the result of blending (not pressed/macerated together).
Indigenous yeast, organic/biodynamic, low so2, all grapes are handpicked, etc…Pretty much a true "natural" Champagne in my book!
Ah and most importantly it tastes amazing and is a great way to start the night!
