- lentil-based red curry with rice
- rye bred topped with potato, vegan mayo and garnish (Smørrebrød)
- a slice of watermelon
Three of the four canteens at the University of Copenhagen southern campus only serve vegetarian & vegan food (at least 90% organic). As someone who is trying to cut down on my meat consumption, I feel pretty fortunate to be able to eat stuff like this for lunch every day.
