    So I took a break to celebrate my birthday in San Francisco for a few days (I picked up some wines out there that I’m excited to review) but had some wines back at home waiting for me to review. I just chose this one out of pure randomness, enjoy:

    **Method Sauvage, Giallo:** Blend of Teroldego, Refosco, and Nebbiolo from high elevation sites, unfined, unfiltered, no additives. Purchased from Brooklyn Wine Exchange in Brooklyn.

    An Italian red blend full of heartier varietals, it’s such a hauntingly engaging and animalistic nose. We’re talking red chili peppers, sun dried leather, star anise, exotic red flora, tart red fruit (cherries, raspberries), and sweet tobacco smoke. On the palate, it is much of the same, tons of juicy character in a moderate alcohol wine. Flavors are more leaning to the fruit aspect: tart cherries, blackberries, raspberries, some star anise, sweet smoke, underlying singed orange peel and an almost rosemary/tarragon note on the backend. It’s bold and beastly but full of brooding character, with medium-high acid and medium tannins that gently grasp the palate to allow the savoryness engage you.

    Woo! As Ric Flair would exclaim. This wine out the gate didn’t really excite me or engage me on first sipping though it was certainly very much out of the norm of the Cali natural wine scene from what I’ve previously reviewed. This is really fitting into the theme that Chad Hinds wanted to play around: the hyper stylized, pulpy horror films that came out of Italy in the 60’s, 70’s and 80’s that this wine’s name comes from. It’s haunting, edgy, fun, animalistic and dare I say savage? Well maybe not savage but it’s hearty and flaunting its forward direction. I’m gonna try pairing the remainder in the bottle with a meaty dish.
