    This photo was taken on April 19th so clearly I’ve had time to post a review for this so I’m not going to waste time and get this one through with.

    **Borachio Pash Rash:** Blend of Pinot Noir, Savagnin, and Chardonnay, all direct pressed. Ancestral method Petillant Naturel. Purchased from Wine Therapy in Manhattan.

    On the nose, it isn’t aromatically intense as I was expecting given the particular cepage here. Notes of cherry limeade, crushed berries that come forth in a lithe manner, some floral aromas relating to hibiscus and iris. The palate was very plush with a crisp, lower intensity of mousse in the bubbles. That said, there is enough mousse to provide lift for the flavors, which are similar to what is observed on the nose, and the clean refreshing mineral backbone. Citrus character cuts through the berry sweetness and the wine finishes with a lush green herbal succinct emphasis that ties this wine perfectly.

    Great, refreshing and fun sparkler that we have here. It’s got a nice riff on the cepage with the inclusion of Savagnin which I’m still trying to acclimate myself to as someone who doesn’t drink much Jura. The Savagnin adds great acid and zingy tropical notes that blend well with the citrus zest of the Pinot Noir and providing balance to the weight/mousse the Chardonnay brings forth. This isn’t a complicated sparkler, it’s good enough for the koalas so it’s good enough for me too.
