I would definitely pick tiles with some color! Maybe a nice blue

Black glass. I had it in my previous home with a white kitchen and I recommend it.
Ease to clean, sleek, modern, minimal.

2×6 (or 8) Subway tile. Go with white to keep the monochromatic look and use counter items and art for some colour.

My wife and I just finished our kitchen as wel with very similar shaker style cabinets. Since everything is basically white/grey Iโ€™m going with a blue hexagon backsplash to add some color.

You have a nice simple style and color palette at the moment. So to me, you can go at it a few different ways.

    1. Lean into the simple, clean aesthetic and go white subway tile with a light grey grout. It will be clean and timeless. Canโ€™t go wrong

    2. Since you have no splashes of color, you could choose to use the backsplash as a focal point. Colorful mosaic tile ( may be too busy), a single colored tile to contrast off of the rest of the kitchen (like a handsome blue), or something sleek and unique like the black glass someone else suggested. I think that could look great.

Another person said you could use counter items to add color, which I think could be another great option as well, either with a simple backsplash or a more bold one.

    Good luck!!!

I would go with white tile backsplash and soft white lighting under the cupboard units

Check out the Instagram feed for Mercury Mosaics. Inspiration for days! You could go really colorful or monochromatic. Such a nice blank slate youโ€™ve got there!

It should be very simple and understated. Perhaps a sheet of white glass like another redditor mentioned or some simple and timeless white tile. You could warm it up by placing some trendy wooden bowls or wooden spoons/spatulas (or wood cutting board, wooden knife block, etc.) on your countertop and it would kinda acknowledge and mirror the warm tones in the floor.
