    One of my go to champagnes with Nowack, an absolute gem for the price. 100% Pinot Noir, grown on calcaire soils that give this wine a great freshness and chalkyness, and with an élevage in oak barrels.

    The first notes were very elegant on the nose, with white fruits, ripe peach skin, sesame hints and a lactic impression in the background. The first sip was nice, but not as singing as I remembered it from my last tasting. This cuvée definetly needs a quarter hour of opening in order to fully reveal itself.

    After some time in the glass, and some heating up (don’t drink your champagne too cold), the lactic background became more present and the glass revealed much more complexity and elegance with white fruits, grilled brioche, sesame, a superb combo. The wine had a very interesting structure, with delicate bubbles, very supple. The palate was really marked every time, with a huge length and delightful bitters. It was winey (Pinot Noir of course) with lots of freshness and elegance. The viscosity and texture around half of the bottle were gorgeous, really a great champagne. It’s great on it’s own, and could do great pairings with cheeses like Brillat Savarin or Brie, Parmesan also could work out well.

    If you like structured and complex champagnes, this a great bottle for the price (around 50-55 euros). Decant it if you don’t mind losing some bubbles, or open it 20 to 30 minutes beforehand, it’s really worth the wait.
