This was fantastic and better than the cuvée Fortbeau from the same year. It started with a little bit of reduction and the acidity was very slighly strident with a mineral attack. After an hour and a half it was beautiful with notes of beeswax and honey, minerals, pear, butter. On the palate it was citrusy with a silky and almost creamy texture. Looooong length. I’m happy to have had this one after the Fortbeau. Amazing negoce wines.
For the vinification and viticulture this cuvée was made from vines planted in a limestone-marl soil. It was vinified without any additives, indigenous yeast, not filtered and without any S02 added. Matured for 2 years in wooden truncated-cone vats. The négoce grapes come from a vintner that share the same methods and values of Ganevat in the Jura.
Ganevat was praised as the winemaker of the year in 2018 by La Revue du vin de France.
