Had a bottle of this at Rampant Bottle & Bar in San Francisco. The bottle is a little vague but I think this is 100% savignan. I've read they also make a 95% chardonnay/5% savignan, but this felt a little too high acid for even a cool climate chardonnay.
Aroma is a little muted, but more intense on the palate w/ green apple, gooseberry flavors riding on ripping acidity, and wrapped in notable oxidative character like acetaldehyde, hazlenut and cheese. Viscous texture w/ slight petulence in the wine, giving it lively mouth feel.
It's a trippy wine if you are used to having crisp white burgundy (like Saint Romain) and also fino sherry. It's like those worlds colliding.
