I feel like the space is boring and needs a bit of colour so I chose blue but can't decide on the backsplash. One is neutral and nice but idk if it's enough character/colour? The second has character but is it too much? 🤔
I love the first one because it is more classic and less likely to date. I think subway has had its day. But to be honest, it is your kitchen. I have a penchant for the color teal, so if you showed me that I would vote for that (because I love that color). So if you like the color blue, go for it. I would just choose a more modern way to lay the tile.
