This bottle was firing on all cylinders tonight. 2019 Burgs continue to convince me that this is the greatest vintage of the last 15 years. On the nose, deep bramble, oak, mixed berries. On the palate, lightly toasted vanilla, expensive oak, generous strawberries, and finished out with a bold hint of minerality. This is a punchy and pure Volnay and extremely Chambolle-esque. Very bold flavors but everything is extremely balanced. There is a hint of rusticity which the Domaine is known for. I have been experimenting with Montille wines and really enjoy their house.
Paired with a very simple roast chicken, jus, haricot vert mushroom, and mash potatoes. Absolute heaven on earth.
IMO the best food/wine pairings are with a) complex wine and simple food or b) simple wine and complex food.
