I alwaya really enjoy this wine; bright citrus-like acidity and and a herbally 'wild' floral nose that readily escapes the glass. The wine is more textured in the mouth than some other pecorino I'm used to, with a nice stone fruit and honey character that lingers. It paired surprisingly well with this fatty cheesy Roman pasta. For under $30 this wine punches well above its weight in my opinion.
