My wife and I had the absolute honour of enjoying this bottle of wine with Heather Phillips in her family’s tasting farmhouse on property yesterday afternoon. This wine was everything I would want in a Cabernet from Napa. It was big, but not heavy. It was opulent, sophisticated and complex. The wine smelled of cassis and dark currant, followed by some toasted oak with a little hint of eucalyptus. On the palate the wine was full bodied and dry, but having been open for 4-5 hours the tannins were perfectly subdued. Dark stewed fruit and dark currants continued and lead to a finish of well over 30 seconds. I can’t wait to see what this wine does in 15 years. It is our daughter’s birth year and we are hoping to secure allocation.
