Absolutely lovely, yet well-developed lunchtime wine. Notes of preserved lemon, beeswax, honeyed chamomile, lanolin, savory herb, and toasted-nut complexity dominate, although some lime (more peel) is still present. Long, pleasant, salty finish and still bright, taught acidity. Definitely a fuller-bodied wine and had a waxiness on the palate that I found quite pleasant. Ate it with trout almondine for lunch, and it was a lovely pairing that played beautifully. I can see how some people would think it's past, and perhaps there's some bottle variation, but it has fully developed in my bottle without going over and aged beautifully for me.
