    Bodegas Tradicíon are a small bodega that specializes in old Sherries. While many bodegas bottle a line of younger Sherries next to their line of old stuff, this bodega only has V.O.R.S. (over 30 years of age) Sherries available , apart from a slightly younger Cream and this Fino.

    The house style I would characterize as broad and muscular. They have a lot of glycerol which can give them the appearance of sweetness as well as a round mouth feel. This makes this bodega an excellent introduction into the Sherry world, is what I would say if price was no object.

    This Fino has spent an average of ten years in the Solera system. It was bottled in November of 2022, so it has seen three years of additional bottle age. The alcohol level is a fairly standard 15%.

    Very strong glyceric nose, the house style. Yeast, green olives. Barely any fruit left, maybe some dried apple. Where this wine shines is its secondary aromas. There’s hay, almonds, cookie dough, salinity, furniture polish, hay, chamomile. Very pleasingly bitter chalky finish, which combines with the doughiness into a sort of burnt cookie note.

    Alcohol is perfectly integrated. Extremely impressive length. Low acidity but enough sapidity to not feel sluggish. More salty than, say, a Muscadet, but not as salty as a potent Manzanilla.

    This is consistently one of the better Finos on the market. While I prefer Manzanilla, and drink it much more, I can think of very few Finos I would have over this.
