Moving soon and I love the house overall except this wood paneling. Removing it isn't an option but I was thinking of maybe covering it with peel and stick wall paper? Does anybody have any experience in doing this or suggestions tips anything? I've used it before on a painted wall so it's not so much the wall paper, I'm just wondering about it sticking to this.

Just a suggestion: white-washing or just painting it white can make a huge difference. You keep the texture but get a much nicer, lighter, airy feeling. I did it in a basement one time and it came out beautiful and changed the whole room. I don’t think peel and stick would work well with the grooves and the unevenness.
