2021 Samuel Billaud Chablis Grand Cru Vaudésir
Checking in on this young, but absolutely beautiful wine was such a treat. Decanted and enjoyed over 4 hours, this showed layers of mineral complexity and pure class.
The nose showed decidedly oceanic with inflections of sweet lemon oil, citrus blossoms, and tart apples.
The palate was beautiful and textured, showing great depth and a fantastic prickle of bright acidity. Notes of oyster shell, liquid rock, and piquant citrus made this incredibly delicious and profoundly satisfying.
There is no question that this was young, but wow it was already so so good!
