
Opened this bottle of 2018 Vincent Dauvissat Vaillons over lunch as polished it off over dinner (frozen pizza from Whole Foods).
This was my time having Chablis of this caliber. Nose showing white flowers, lemon pith, and ocean breeze. But nose itself felt muted – nothing was really jumping out of the glass except the flowers when the wine opened up a bit. The palate had tons going on – citrus backed by lovely and typical Chablisian minerality, some salted grapefruit, Greek yogurt, hazelnuts. Being said, it felt like I opened this thing a little too early (or maybe in an in-between phase). You got glimmers of its potential, and it was very tasty, but it could have been better. The last 3-4 sips after it had been open 8+ hours were the best – once the tertiary flavors developed with air, it was pretty magical.
Overall, I understand the hype because I think I see where this thing is headed. Even in its in-between phase, it was a really fun experience.
