Tanins, perfect acidity to balance the tannins, incredible depth of dark forest fruits. (I know I should have drunk white wine with the cheeses but I was craving for cheeses and I last night I had the Yuuyake Gewürztraminer of Lindenlaub which would have pair perfectly with its spices)
