Local bar had this open today, so i had to try it! I’ve only had his Himmel Auf Erden II, and wasn’t deeply impressed. This one however, blew me away.
Straw yellow and clear, impressive as he doesnt filter.
nose: flowery notes, white flowers, with a small body of fruit (papaya/melon) encapsulated by a nice round butteriness.
Mouth: velvety with big fruit, acidity comes in the middle and finishes so strong, i am still salivating. Finishes off with a very unique umami japanese flavour, soy sauce-ish. beautiful depth with a very long finish
this is one of the best wines I’ve had in 2023, absolute beauty.
