Really cool project using hybrid grapes. The nearly-fermented grape must is added to just-crushed apples, both pulling flavors through maceration and kick starting the fermentation. The wine is really juicy and crushable, with very mild tannins and low acidity.
Excited to see a project using hybrid and native grapes in innovative ways. I’ve also enjoyed the “Pink(ish)”, which uses Chardonelle & Noiret. Looking forward to what comes from this producer next, especially now that they’re developing their own VT vineyard.
