Franz Plays with Kalk und Staub is part of Franz Weninger’s Plays with line of wines, focusing on fun and experimentation. After making a successful Pinot Noir Pet Nat in 2016, Franz decided to work on another batch in 2017. However, he was greeted with far less success: the juice simply refused to ferment. Franz, unfazed, left it as a light, sweet rose in a Champagne bottle. The sugars have fermented after 36 months in the bottle, yielding a slightly bubbly Pet Nat.
This one exceeded all of my expectations. Light, pleasant bubbles are followed by a burst of fresh acidity. Red berries like strawberry and raspberry are held in check by a pleasant earthiness (or funk if you would like to use that word). If you had asked me about the vintage of this wine, I would not have said it was 5 years old. This is without a doubt one of my favourite wines from Franz.

Looks delish! I have tried Franz’ Ponzichter and was pleasantly surprised with the subtle vibes from a beautifully natural process – will look out for this bottle!
