Really fun wine. Oregon organic fruit. Volcanic soil. Predominately Riesling. Acacia and Austrian casks, aged under flor ten months.
I’m relatively uneducated in wine, natural or not. But I think this is one of my favorites I’ve had, but as I try more, I get more excited. I’ve been very wrapped up learning about my restaurant’s wine, and selling it. Had the opportunity to grab something that looked interesting, and wow. I’m kinda floored. Pear, apple, (grape juice) notes. Bright and deep. I can’t describe the more nuanced notes but I dig. A lingering tartness and a bit grippy. Slight effervescence. Im very happy drinking this.
Idk much about Ovum but seems they’re kicking ass.
