    Les Dolomies is for sure one of the best quality for price producers in Jura (with Buronfosse of course).

    100% Chardonnay here, very very reduced at the opening. After more than an hour in the bottle it had shown little signs of evolution. Having had already Les Combes (also Chardonnay) earlier this year, which opened up faster, I decided to decant it and shake it around a bit to waken the wine up. After two hours the nose was still closed up but the wine had opened up to a large texture, napping the palate, and was very tense with a delicate saline finale. Quite interesting also to see it evolve in the glass over time, as the texture grew more complex, with viscosity growing over time. In terms of aromas the wine stayed quite reasonable, with the classic Jura Chardonnay notes of wet stones, hints of citrus and this tense tense acidity.

    Paired with a leek and oyster mushroom risotto, it worked out very nicely by cutting down the fatty dish and bringing a saline note to it. Probably still too young, it was however nice to see the potential that this cuvée has. Forget it in a cellar for two more years and it should be very interesting.

    Les dolomies are by far my favorite. Hard to get consistently here in Long Beach, CA

  3. Only recently discovered Les Dolomies wines but WOW! Prémice 2019 (100% Savagnin) blew my socks off, just beautiful
