I believe the two stones on the left and right in the first picture are natural. Ask yourself how you use your kitchen before choosing a light Stone like that, natural stones especially white ones are prone to absorption, staining, darkening with moisture so staying on top of sealing it when you start to notice things soak in. This will be key for the longevity of its beauty.
Quartz is easy to clean but, again, how do you use your kitchen? If you like to pull hot stuff out of your oven and take hot things off your stove and put them directly on the counter then quartz is not the best option unless you use a trivet every time. Any pan or pot that is too hot can cause quartz to “Orange Peel” the surface and there’s no repairing that. That being said it would have to be a pretty hot to do that but there’s a risk for it. I don’t put hot things on my quartz.
Natural Stone can be fixed if you scratch it, you can surface polish it and it gains a nice patina to it over the years. Quartz will not.
I personally love natural Stone, but I put quarts in my kitchen because I wanted a bright countertop.
I love the floor, looks like walnut to me almost. I think the courts top you’ve got showing there is a little too yellow for the Browns you have in your floor and cabinetry. But this could also be lighting

I like both except the backsplash . I would change the backsplash on both options. With the white quartz you could get away with a more boulder look or even a marble look. There’s a marble that has light streaks of grays and browns. In my opinion, I feel like the backsplash you’ve chosen cheapens the look of the rest of your choices.

First one – the natural stone doesn’t work with the cabinets – quartz is awesome – we love ours – I agree with the other poster who mentioned the backsplash and how it doesn’t go – I agree you need to do something different there
